Our Smoking Process is based on traditional natural oak smoking. The oak sawdust we use in our smoking processes is sourced locally from Norfolk sawmills.
First, we dry salt the fish, after which we brine it. Finally, its placed into our large kilns to be smoked.
We use our kilns to produce all our products. This enables us to smoke and roast certain products at the same time.
We continue to use the time honoured method of dry salting and oak sawdust.

G R Bunning & Co are a local fish shop in the heart of Norfolk. Known locally as ‘Bunning’s Fish’, we are a family business selling fresh local fish and shellfish, along with some of the finest sourced fish from around the world. Come and visit us at our family-run fishmongers, or at one of the local markets, and enjoy our fresh fish and frozen fish.
We source seasonal fish from local producers, such as cockles, whelks, winkles and shrimps from the port of King’s Lynn. We also have Cromer crabs and lobsters, along with cod, plaice, dover sole, skate and wild bass from just along the coast at Lowestoft.
We supply local restaurants, pubs and trade, as well as selling directly from our fishmongers in Cranworth, Norfolk and at local farmers markets.
